Vineyard : These wines come from the 45 hectares of the Imperial Hétszolo Domain (South-South-East facing); a loess and clay soil on a base of volcanic rocks.
Grape : Furmint (90 à 100%), Harslevelü.
Annual production : from 12, 000 to 24, 000 bottles, depending on the year.
History : Aszú wine has been known as the king of the Tokaj wines for centuries. The exceptional Tokaj climate, with light rain at the end of September and misty mornings, followed by a warm and sunny October, is ideal for growth of the ‘noble rot’ grapes known as Aszú in this area. The production of "Aszú 6 Puttonyos" is especially rare.
Wine making : According to tradition, harvesting only starts after 28th October, and may last until the first snows, so as to allow the botrytis cinerea (noble rot) to develop and to obtain the maximum concentration of grape must. When the grape must concentration is sufficient, the grapes with noble rot are separately harvested. The Aszú grapes are manually harvested one by one, and maceration takes place with the grape must. Next fermentation takes place in barrels for one and a half to two months. The white wine is then aged for three years in oak barrels stored in underground cellars at constant temperature (12° to 13° C) and humidity. This long ageing process gives the wine its complex and inimitable bouquet. .
Style : A magnificent old gold colour. To the nose, elegant, subtle and complex aromas with a hint of fruit (apricot, plum, peach, orange) or of honey, hazelnuts … The taste is sumptuous and unmatched. Its complexity and its rarity confirm the mysterious and engaging character of this true “king of wines, wine of the kings” (Louis XIV).
Accompanying dishes : In Hungary, " Aszú " wines are traditionally drunk at the end of the evening or as an aperitif. However, they also make a fine accompaniment to foie gras, white meat in sauce, game, blue cheeses or desserts. It should be noted that a bottle, once opened, can be kept for several weeks in the refrigerator without being spoilt. The wine should ideally be served between 10 and 12°C.
